回复: 《中文菜单英文译法》总算出来了.当“九门小吃”遭遇奥运 豆汁译成“北京可乐”?2008年07月10日 08:49中国新闻网大 中 小 打印豆汁,焦圈,卤煮,炒肝,墩饽饽,艾窝窝……流传数百年、种类以千百计的老北京小吃在二00八年遭遇了现代奥林匹克,奥运期间预计一点二亿人次的游客前景,让北京各家老字号均在跃跃欲试。在北京后海胡同深处的“九门小吃”,工作人员正在加紧翻译各种小吃的英文名称,小吃城里的服务员也在接受基本服务用语的英文培训。“九门小吃”汇集爆肚冯、年糕钱、小肠陈、月盛斋等十六家北京老字号,奥运期间将有官员、裁判以及夺冠的中外运动员到此一饱口福。北京小吃种类繁多,名称极富地域色彩,如何将开口笑、驴打滚、墩饽饽,艾窝窝这些小吃翻得雅俗共赏并非易事。“九门小吃”董事长侯嘉介绍,他们的原则是尽量将小吃所含原料都翻译出来,让外国游客看到菜单就能吃个明白,同时兼顾这些市井吃食蕴含的京味底蕴。“比如豆汁,可以直接译成‘绿豆煮的汤’,但我们在考虑就把它译成‘北京可乐’,这种翻译简短而又形象,可以借助可乐的意象让外国游客记住豆汁。”侯嘉说。类似这种中西合璧的做法被很多北京老字号采用。在百年烤鸭老店全聚德七月初专门为北京奥运会推出的菜单上,除了“全鸭席”等老北京菜品外,赫然可见“鸭肝酱配面包”、“雀巢鸭宝”、“奶油烤鸭杂拌”等带有浓郁西餐味道的菜品,显然受到了法餐、俄餐等西式菜品的启发。北京小吃醇厚的市井气与胡同味让人着迷,但这种“原汁原味”遭遇奥林匹克也必然带来“水土不服”的难题。豆汁被很多人视为北京小吃之魁,但地道豆汁那股犹如泔水般的气味又让很多游客避而远之;同样,卤煮、炒肝、爆肚这些涉及动物内脏的老北京小吃也常让英美等国的游客无从下筷。身兼老北京传统小吃协会会长的侯嘉对此十分坦然:“小吃本来就是具有浓厚地域性的饮食,国外一些地方原汁原味的饮食也很难让中国人接受,毕竟小吃大都是从地方传统与风俗历史中衍生而来,“水土不服”对外乡人而言是常见现象。”侯嘉表示,一方面他们在奥运期间会确保食品安全,绝不让外国游客“喝一口豆汁就拉肚子”,但另一方面,他们不会在面对奥运游客时对小吃进行任何改良,“吃不吃是个人选择,但我们一定保留最纯正的味道,用这些告诉别人‘这就是北京’,‘这就是北京小吃’。”
